Huevos Rancheros 

Total time: 15 min­utes

Ingre­di­ents & Prep:

1 cup Home­made sal­sa or store bought sal­sa (doesn’t mater just sal­sa)

2 Eggs

1/2 cup of black beans

1/2 cup of steamed corn

1/2 avo­ca­do


Salt and pep­per

Coconut oil

Shred­ded cheese


  1. In a skil­let add coconut oil, sal­sa, corn, cheese, and black beans and then put that fry­ing pan on the stove at medi­um heat for ten min­utes. Add salt and pep­per to your lik­ing.
  2. You can either fry the eggs in a sep­a­rate pan and put them on the mix­ture or poke holes in the mix­ture and dump the raw eggs in. I fried the eggs sep­a­rate­ly but it’s all going in a tor­tilla that’s going in your stom­ach at the end of the day.
  3. After ten min­utes the mix­ture should be done and you can add the avo­ca­do and cilantro. Dust the eggs with apple­wood spice.
